Maqluba

Maqluba (Arabic: مقلوبة) is an Upside-Down Rice and Eggplant Casserole made with richly succulent braised lamb and sometimes tomatoes. When the casserole is inverted, the top is bright red from the tomatoes that cover golden eggplant. Maqluba is one of the most popular family dishes in Palestine where it is generally made with lamb or chicken and different sorts of vegetables (tomatoes, onions, aubergines, cauliflowers and others). |
Basic Preparation
- Egg plant is first sautéd in (olive) oil on a large skillet until brown.
- Onions are then similarly sautéd until translucent. Ground lamb and spices are then added.
- Tomatoes are placed upon the bottom of a oiled sauce pan. Cooked rice is placed atop the tomatoes and then the meat/onion mixure is added. Final the browned eggplant slices are placed atop the ingredients - compacting everything into the saucepan. Some add additional rice at this point.
- Water or stock is added and the ingredients int the saucepan are brought to a boil, then simmer covered at a low temperature for about an hour - water being added during that time if necessary.
- Once simmered, the ingredients are given time to cool where afterwards the saucepan is turned upside-down - creating a molded presentation of the cooked goods.
- Present on a plate, garnished with pine nuts, sliced almonds, greens as desired.
